Your favourite soup

    Me and OH are having a week where dinner every night will be soup and bread; it's an attempt to save money and to get more veg on board :)

    So I need some inspiration because I don't want to be boring and just stick with tomato or mushroom every night lol... so what are your favourite soups?

    The one i made today was a vegetable soup
    500gr of veg
    butternut squash, red pepper, onion 2 veg stocks salt and pepper cook in 1 and half pints of hot water and then blend.
    I thoroughly enjoyed it and have enough in the fridge for three more lunches :)

    Lol I thought it said soap in the title, was about to write eastenders! .... But soup wise I like tomato or vegetable.

    I love winter vegetable soup, lentil soup & even though I really detest onions, I love French onion soup.

    Has to be home made though, really can't eat anything out of a tin :eek:

    I like lentil.

    Lentils, carrots (chopped small or grated), onions (ditto), tin of chopped tomatoes, garlic, veg stock. Sweat the veg, add lentils, stock, garlic and toms. Cook (takes about 20 mins for red lentils, up to 40 for brown, green or puy). Also you can ring the changes by adding curry paste/powder, or chilli, or whatever veg you have handy. I particularly like it with garlic and chilli. Yumyumyumyumyumyum.

    Leek and potato is also fab. This recipe if from Patrick Holford's low GI cookbook and we love it.

    tsp olive oil, 2 cloves garlic, 2 large leeks (trimmed, washed and sliced), 2 medium pots (cubed - I peel them, but recipe says just wash them), pint boiling water and a stock cube/powder, 410 can cannelini beans drained and rinsed (we like it even better with a big can of butter beans). sweat garlic and leeks for a few minutes until soft, add other ingredients (except beans) simmer 15 mins. Add beans and bring back to a simmer, add black pepper and blend with a hand blender. This serves two. It's delis and pretty filling. If you want to make more in acse you are hungry bunnies, any leftovers will keep innthe fridge for up to 3 days, but I bet you'll eat it.

    Carrot soup is lovely, too - lots of carrots, veg stock, onion and (secret ingredient) curry powder to taste - lovely!
