If you put olive oil on your cat's skin she will lick it off and it will make her groom even more than she is already. Which would be counter productive.
It sounds as though she may have developed a flea allergy, which is not uncommon. She needs a steroid injection from the vet to reduce the itching. Possibly an antihistamine might help a bit, (piriton is the only safe one for cats) but you need to give it under guidance from the vet. I would not let her outdoors if she is treated with piriton as it can make the cat sleepy.
From now on you need to ensure she is treated every single month without fail preventatively for fleas. Use a reliable product such as Advantage, Advocate, Bravecto, or Stronghold. Best to avoid Frontline as the insecticide it contains is no longer effective in parts of the UK. (note: Bravecto is given every 3 months).
For the long term to help her skin improve add Omega 3 fish oil to her food. Buy capsules of salmon oil or krill oil, pierce them with the point of scissors and mix with her food. Start with contents of one capsule every other day. Too much can cause loose stools.
