Does anyone have a yummy cookie recipe?

    Its all a PF member's fault too!!

    I don't have a recipe but will go to the shop and buy whatever I need, does anyone know any really nice recipes which make nice chewy/not really crunchy cookies?

    Will rep if there is a good 'un :thumbup:

    This is a recipe for some nice Dutch cookies

    Speculaas,

    Ingredients:
    500 gr flour
    150 gr butter or margarine
    1 teaspoon baking powder
    200 gr brown sugar
    3-4 tablespoons speculaas spices (see on bottom of message)
    4-5 tablespoons milk

    some rice flour or cornstarch
    (sliced almonds)

    Preparation:

    Sift flour and cookie spices on a working surface, sprinkle the baking powder and brown sugar over and divide the cold butter in flakes. Knead with cold hands to a firm dough. Add bit by bit some milk. Wrap in plastic foil and place a night in the fridge.
    Prepare:
    Preheat the oven to 200°C/395°F (fan oven 180°C/360°F).
    Dust the "speculaas" mold with some rice flour, take a little ball from the dough and push it in the speculaas figurs. Cut with a knife flat on the back of the mold the remains off. Push, if used, the sliced almonds carefull in the bottoms of the cookies. Tap the mold on a work surface so the speculaas falls out (if the dough won't release from the mold dust little more for the next portion). Place on a greased baking sheet.
    Bake 10-15 minutes.

    cookie spice mix: mix the next ground spices: 15 gr cinnamon, 2 gr nutmeg, 1 gr gingerpowder, 0,5 gr cardemon and (when you like spicy) very little white pepper.

    speculaas mix: add to the cookie spice mix above: 2 gr ground cloves.

    They're really lovely :)

    Oh go on then, we don't make them often enough anymore...

    These are just like the big cookies you get in bags at the supermarket with big chunks of chocolate in them. Lovely and chewy :D

    Chewy Chocolate Chip Cookie Recipe


    1 cup(220g) brown sugar, firmly packed
    1 cup(220g) sugar
    1 1/8 cups(400g) butter, softened but not melted
    2 eggs
    1 1/2 tsp. Vanilla
    2 cups(300g) white flour
    2 1/2 cups (350g) oatmeal (before grinding) (you can use Ready Brek! Just makes sure you blend it)
    1 Tbs. baking soda
    1 tsp. salt
    18 ounces(560g) of milk chocolate chips (we use bars of cooking chocolate chopped up into big chunks, if you want to make them really special use a big bar of Cadbury's :D as a guide for size goes, the chunks are about the size of half a piece of cadbury's)


    Take the butter out of the refrigerator to soften for a half an hour or so. You can also use the microwave to soften it too. Put the setting on defrost and cook for 10 to 15 seconds. Remember, you want to soften not melt the butter.
    Use a blender or food processor to grind the oatmeal into flour. In a blender grind about 3/4 of a cup at a time. Set aside in a bowl.
    In a large mixing bowl add:
    brown sugar
    sugar
    butter
    Mix these ingredients until well blended. Use a strong spoon or a heavy duty mixer like a kitchen-aid.
    In a small bowl mix the eggs with the vanilla until well blended.
    Add the eggs and vanilla to the sugar mixture. Beat until mixed in but don't over beat.
    In the bowl with the oatmeal flour add:
    the white flour
    baking soda
    salt
    Mix with a spoon until all flours are blended.
    Now add the flour mixture 1/2 of a cup at a time to the sugar/egg mixture until all the flour is mixed in.
    When all the flour mixture is blended in, add the chocolate chips (or chocolate chunks) by folding them in until they are evenly distributed.
    Drop by teaspoon or tablespoons depending on the size you want, on to an ungreased cookie sheet. Leave room for cookie expansion while they bake.
    Bake at 180 degrees for 9 -11 minutes.
    Remove cookies from the oven and place them on wax paper (greaseproof paper will do) on your counter.
    Letting them cool on wax paper seems to keep the cookies soft and chewy. Once the cookies are cool, store them in a Ziploc bag.
    If you like your cookies on the softer, chewy side, cook them for the shorter time period (we do it for about 8 mins).

    Chill your cookie dough before baking and the cookies won't flatten out as much.

    Cookie Recipe.

    Step one..............Take a bus ride into town,
    Step Two.............Walk to your nearest Asda Store.
    Step Three...........Go up through the isles to bakery section,
    Step Four.............Look for Chocolate Cookies in packs of 5.
    Step Five.............Take said cookies to counter and pay.
    Step Six..............Open packet before exiting shop, open mouth and take big
    bite of cookie and chew...........Hey Presto. Yumminess.:thumbup:

    Since your supermarket is so far away, I've edited my recipe a little incase you can't get some of the items.

    If you do try the recipe, let me know how scrummy they are :D ... I might have to get hubby to make me some tonight now!

    I might half the ingredients and do half of each recipe, they both sound yummy :D

    We have most things kicking about but its things like brown sugar I've not got enough of that so the shops here I come :thumbup:

    The shop was rubbish, not even any chocolate chips :eek:

    I bought four bars of galaxy I will smash them up and eat the leftovers hahaha :lol:

    I might get hubby to make a batch of our usual, then while they are in the oven, he can prepare Sorcha's recipe (that's if you don't mind Sorcha? :D). I'm not sure the mixture would last in the fridge over night otherwise :lol: ... mmmm cookie dough.
