Liver comes up a lot in this discussion. I've seen it in a training manual too so it must be a good one.
Be careful with processed meats like Spam, Bacon and Sausage. They usually have a high salt content (or other dodgy content).
I always stick with unprocessed meats for feeding and treats; Cooked if the meat is questionable to ensure there's nothing living inside. Mine loves turkey and chicken. When my wife brings leftover turkey from work, he knows it's there, even the very first time. He definitely has a nose for the birds so I might try chicken liver soon. It's cheap and I love eating it myself...
He does have success with dog chocolate drops (also more convenient to carry around) although I know that the flavour, smell and look are more to please humans than dogs but they seem to work. They're also small so great to use for training as he doesn't spend too long eating them. I can't give him too many though as the texture seems to make him cough after 6 in succession.
I did try him on leftover bacon which he left most of. Also white fish which he wouldn't touch, even after a long walk he preferred to skip a meal than eat it. I eventually felt sorry for him and replaced with his usual kibble which was gone in a flash.
