A lot of people freeze the meat & bone for at least 48 hours - this wont kill bacteria of any kind (although dogs stomachs can deal with this anyway) it is mainly to deal with parasites. They need water to live and the freezing therefore kills them. You should not really have a problem with most good quality human grade meat though anyway...
Regarding what meat/bones - really anything appropriately sized for your dog... so anything that is big enough that they cannot swallow it down whole/thew wrong way bascially! Ribs are good bones from lamb & pork. Turkey legs and wings. Chicken/duck leg & thigh quarters and breast & wing quarters...rabbit halves/quarters...etc etc I pretty much feed anything that isnt a weight-bearing bone of a large animal. As spid says, this means that bones are too dense and so could potentially chip the teeth/enamel. So avoid leg bones from cows & sheep mainly.
