Re: liver cake?

Hi Codyann - I've just made one

I think it I had about 500g chicken livers.
Put them in the liquidiser with an egg and 2 garlic cloves.
Pour the mixture into a bowl and add flour (I used plain) till it makes a dough.
Smooth onto a baking sheet and bake middle of oven - Gas 6 / 200C for just over 30 mins.
Think I added too much flour - probably better to make it a spreadable mix rather than dough. Thats what I will do next time.

Dont think it really matters what you do. As long as it stays together and they like it

Re: liver cake?

1lb liver (ground in a food processor)
1 cup of cornmeal
Half a cup of flour
1/2 minced garlic cloves
Optional 1/2 eggs if you want a more (Cakey Mixture) Leave out if you want a more cookie texture.
Mix ingrediants in a food processor, cover the bottom and sides of a cookie tray in foil or just lightly grease, spread the dough across the sheet and bake for 30/45 minutes or until well done. When cool peel off the foil break or cut into bite size pieces and freeze. They will keep in the fridge for a week or two as well.

You can also make "liver pieces" Just boil the liver put it on a cookie tray, and bake for 15 mins, turn it and bake another 15mins until it is hard.

Doh!! Cooking type would help wouldnt it
Fot the liver bait/pieces cut into 2" squares cover with water, (You can Add a garlic clove too if you want) bring to the boil, simmer for 15 mins or so.
You can even drain it pat it dry and use it like that or,

Then put it on a baking tray, 15 mins in the oven, turn another 15mins until hard.

Corm meal is just flour made from maize really. I should think just using extra flour in place of it would be fine. You can get corn flour easily otherwise.

Re: liver cake?

"My" recipe :

1 lb. Self-raising flour

1 lb. Liver

2 Eggs

2 teaspoons of Garlic Powder

1 cup of milk

Water to mix

Put the liver, eggs and garlic through a blender until smooth. Gradually add the flour and milk, and then top up with water until you have a sponge-like consistency. Put the mixture into a flat baking tray and place in a pre-heated oven at 200 degrees. Cook until no liquid remains when tested with a needle or fork (roughly 30-60 minutes), depending on the depth of the tray. Cool it off, before cutting into cubes, bagging it up and freezing it in separate packages. You should have enough titbits to last you for weeks.

Re: liver cake?

Just try to avoid using pigs liver, and definitely no need to boil before use if cooking it in oven.
