I think it depends on the individual show and when they need to finalise their catalogues for printing by. If they are short of entries its in their best interest to hold out for as long as possible.

Most shows generally, unless they full, will keep the show open for up to a week after the official closing date but as Saikou says it will depend on the individual show managers.
