I got my 2 rescue cats last December and they were exactly the same as yours. Now they are very affectionate but only with me and they still don't like strangers. I'm afraid to say that it took more like 2 months for them to get used to me.... after 2 weeks they were still regularly hissing at me
I started mine off in the living room so I was around them quite a bit watching TV etc.

Keep hand feeding her and try to ignore her a bit too. It could take a while but once she realises you are going to keep feeding her she will come round! After about a month I had resolved myself to the fact that one of mine would never ever sit on my lap, but eventually he did and now does more than the other one, so they really can change completely!
