I appreciate what you're saying about your cat not liking "chunky" food, but saying you need a grinder and that cats can't get all their nourishment from a raw diet isn't true. As long as you include muscle meat at around 80%, edible bone (so chicken, rabbit, quail bone for example, soft enough to eat), at around 10%, heart (a muscle meat, mega high in taurine on its own), and innards like kidney, spleen, liver (liver should take up around half of this percent) at around 10%. That's all there is to it. No extras needed. Cats have all the hardware to deal with this, being obligate carnivores.
It's true that it can take a bit of time to transition them, but whatever you do, you really should steer clear of grains, and soaking dry food. The bacteria that this can cultivate is quite well documented.
Failing that, and if you don't think a raw diet is for you, there are loads more wholesome, meat-based diets around without your having to resort to "people food". Have you tried Bozita? My cat's super-fussy and she adores Bozita as well as her raw diet.
