I kind of agree with what you are saying, but some cats/kittens personality is affected by being in a shelter with other cats etc, so they may appear shy or demanding when they are not actually that way. I do think that you and the cat choose each other, but a rescue shelter visit/s will not always show the personality of your cat.
I wanted a ginger and tabby kittens, but fell in love with my black and white Furbies. Oscar was so shy and didn't like being handled when in the shelter, whereas Wilbur came to me straight away. If I was judging Oscar through my experience at the shelter I would have thought he wasn't right for our household, but I didn't actually believe he would always be this way.
He is now the adventerous one who will always demand attention, loves to be cuddled and is first to greet me when I come home.
I also think the way cats/kittens are introduced into their new home is very important with how they start to feel welcome and trust their environment and owners.
First impressions therefore can be misleading.
