Chicken is best to start with, because it is tolerated well by most cats, most cats like the flavour as it's quite mild, it's easy to get hold of, and it contains small bones that can be eaten.
Once you start a proper raw diet you will want to rotate the types of meat you feed, and then you can give pretty much anything, including kangaroo, beef, lamb, pork, ostrich, frog, mice, rats, rabbit, turkey, duck, buffalo, etc. etc.
