Firstly if you are just feeding cooked chicken breast and fish you have a few issues. By cooking you remove a lot of the nutrients, there is not enough Taurine (a vital amino acid for cats) in chicken breast or fish, fat is an important element of a cats diet as it is easy for them to convert into energy and enables them to have those quick bursts of energy when they need it.
However, the gravy bit is easy its best if you start with a chicken carcass (left over from your sunday roast) boil it up in a large pan with water for about 40 mins (you can do this with wings, drumsticks or breast if you don't have access to a caracss). Remove the chicken from the water and remove all the meat from the bones. Throw all the cooked bones away as they are very brittle and will damage a cats stomach. Put the meat back in the broth and bring up to the boil. Add a couple of satchets of gelatin (available from the bakery section of the supermarket. Stir and let cool.
Better than than just feed the chicken and fish to the cat from the packet with the skin on and the bones in.
