My Mum in law's cat did exactly the same! Once he had discovered the adult food, there was no way he was going to go back to kitten food and in fact the older ones used to eat the kitten food too! I would try and introduce some kitten food back into her diet so that she is getting the correct balance that she needs but then as long as she is happy and healthy, I don't think you are going too far wrong!
