Here's the gen. That pheasant probably cost about £3, that being the price I paid for my poults anyway, so the local game keeper is not going to be too chuffed, but if it's on your land, well, fair game.....

Pheasants are quite stupid, and as it's early in the season, they won't have got used to getting out of the way of dogs. They will learn, or they will get eaten by Mr Foxy Loxy. I should have thrashed the dog for chasing and catching the pheasant, to discourage it from doing it again, and I wouldn't want your dogs to suffer at the hands of a game keeper.

Having said that, if you get pheasants coming into your garden, fair game. Kill em and eat them. You don't need a recipe, just hang it for 3-4 days,pluck it, draw it, roast it with some streaky bacon on it's back. Better for you than chicken, they're free range, and delicious.

But a bad idea to let your dogs think it's a game, so I should put a lid on that sort of thing now.
