I know you have fallen in love with your baby and I am not trying in any way to put you off her. But the breeder does not sound great and if this is an unregistered cat I hope the price you're paying reflects this and you are not paying the same as you could get a fully registered pedigree for.
Because if you have not seen the mum and there are no papers there is no guarantee this is a full Maine Coon. If it is registered I am under the belief the colour would need to be on the papers confused:
