our rabbit used to peel off and eat wallpaper lol
we use a product that stops dogs chewing on furnishings and stuff and comes in a spray bottle and is a terrible tasting liquid that comes in a spray bottle and suposivly lasts for ages on the sprayed article

its non toxic and harmless only it tastes horrid "not that ive tasted it hehe"

anyways it stoped him chewing the wallpaper

they will chew on anything even carpets and curtains
anything

you can get like corner protectors that will protect your corner areas and are normaly metal and come in a 90 degree angle that can be glued to the wall and painted

or if you are mainly just protecting the wall perhaps some wood cladding
or buy some plaster board or mdf sheets
these can be screwed in place and will provide heavy duty resistaince
for chewing bunnys
and can be painted to blend in with your decor
athough that is going to extreme mesures

i would try the spray and see how you get on

failing that use a bit of creativity
look for sommit in a diy shop that might protect the corners
you might find something that was intended for other uses that might be perfect for the job
