Local butchers ... they're rare here, maybe one in town. The % of male butchers to qualified female butchers is probably more like 99.999999999999% when I qualified as a butcher there were 5 female qualifed butchers in wales ... it was 25:1 in the classroom, and yes I know all the jokes about sausages you can think of, lol, although it means htey can't rip me off by pretending one cut of meat is something else. Most butcher will either give away the bones or charge very little for them as they have to pay to get rid of them, so it's a win win situation for them.
