It could be that the condition your cats teeth was in was causing some discomfort upon eating. Keep an eye on her to make sure she is putting weight on with all this eating. My cat started eating everything in sight and was losing weight, turned out she had an overactive thyroid. But if your cats weight is stable or she's putting it on, it will probably be her teeth that were preventing her from eating before.
