She's probably just a nervous cat around people. I didn't see much of my cat for the first two years of having her. She'd hide behind the couch and would only come out when she wanted food, water or the litter tray. In that two years I just left her to her own devices and let her come to me in her own time. It will take time for her come to get used to you and your routine. Just going about your day as normal and let her get used to you. You could get a Feliway diffuser for her which will help her relax a bit. A big change in her life like changing homes would be enough to unsettle anyone.
