cat biting

My MIL moved house a few months ago and is getting a new house next week.
Her cat has just started to bite her, or anyone that touches him. He is usually non aggressive but now bites all the time.
Before he moved in to the new house he was always out hunting in the fields, now he lives in a cul de sac with no back garden or fields nearby. He still has access to outside though.
My OH is currently staying at the house and the cat jumped up onto the bed this morning and after being stroked he turned around and bit my OH on the hand.
Not sure what the reason for the behaviour is, but this has only just started in the last few weeks, he seemed happier before.
Is there anything she can do to stop him biting. He has been neutered and is about 2 years old.
